My name is Ted Mauro. Nice to meet you. I live with my wife and 2 sons in Southern Colorado. I grew up farming and green chili peppers were one of our main crops. My wife grew up watching her step mom sell burritos. We were both ready for a career change and decided to go into the food business.
We've been making burritos since 2002. We have customers who eat our food 5 days per week. When someone asked me how are burritos and green chili taste, I said they are frickin good. They Are Frickin Good.
We use the finest genuine ingredients. You will not find soy protein or fillers in our food. When we say beef we mean 100% Beef and 90% Lean. When we say Pork, it's 100% Pork and the leanest cut possible. We use real cheese, real pinto beans which start out as whole beans and we cook them 100 pounds at the time. We use authentic peeled and roasted chili peppers and our tortillas are made fresh and to our custom specifications.

6 Types of Burritos and Hot or Mild Pork Green Chili Sauce.
You can choose from our common lunch and Dinner time burritos which consist of the Bean and Beef Deluxe Hot and the Bean and beef also comes in mild. The Bean and Beef are made with 90% lean ground beef, pinto beans, cheddar cheese, and roasted and peeled green chili peppers.
We also have the Ranchero for a lunch or dinner treat, which is 90% lean ground beef, roasted and peeled green chili peppers in a green chili sauce and cheddar cheese.
Our Breakfast Line consists of the Fat Boy Burritos. These are made with fried potatoes, scrambled eggs and 90% lean diced pork mixed with our roasted green chili pepper sauce. The Fat boy comes with or without cheese. (The Fat Boy with Cheese has like an ounce of 100% cheddar cheese.)
Our 3rd Breakfast Burrito is the Breakfast Ranchero. This comes with 90% lean ground beef, roasted green chili pepper sauce, scrambled eggs and our 100% real cheddar cheese.
Our Diced Pork Green Chili is available by the quart. This is made with 90% lean diced pork, roasted and peeled green chili peppers, tomatos, whole wheat flour and various spices.

Just a short note to let you know how much I like your breakfast burrito.
I prefer the Fat Boys when I go to Douglas on Friday/Saturday. I always stop and pick some up. I like them so much, I even ask them if they have some in the freezer, as sometimes they are gone by the time I get to town.
They always go back and bring some out for me.

I run a coffee shop/restaurant/gift shop in Glendive, Montanna, and I am interested in serving your burritos. I had one (I mean 2, another one a couple days later) as I was travelling through Cheyenne, Wyoming. They brought back memories of when I used to live and work in Denver, and someone would bring their cooler of homemade burritos through the offices. They were always delicious and I have missed them. The Fat Boy ll is probably my favorite.
Any way, how can we obtain burritos from you? Can we buy directly from you? Do we need to go through a food broker (we currently work with Food Services of America)? How many do we have to buy? What is the price? How are they prepared? I assume they come frozen and are heated up.

My name is Rebekah Mauro. These recipes for the burritos & green chili have evolved from different events. Some of the events are practical & others are down right hillarious. As a mother, I can't begin to tell you the conveinence of having these burritos on hand for busy families & lifestlyes. Everyone loves them, from kids to grandmothers. They are a quick snack or an easy meal. several weeks back I found myself caring for 7 children aged from 3 years to 8 years. They were all hungry & wanting a snack. I asked if they liked hot or mild? breakfast or lunch? I nuked the kinds that they wanted & was surprised that young children like spicy food. ( our 5 year old won't touch it LOL ) Due to the size of our burritos, I was able to feed 7 hungry children in less than 15 minutes. Best of all it only took 4 burritos.
